Charles Bibilos is a NYC-based eater, writer and educator.  When he isn’t eating, you can often find him eating, writing, traveling, eating, exercising, eating, teaching, eating, squealing like a pig, or possibly maybe sometimes stuffing more food into his mouth, preferably in another country.

Charles has a relatively short attention span, and worked professionally as a bartender, wedding DJ, trapeze dancer, property manager, parking valet, housepainter, bartender, and showgirl before settling into a career in writing and education.  Charles’s writing projects have included a plastic surgery website, an ornithology textbook, software documentation manuals (exciting!), corporate annual reports, TOEFL test-prep books, and art history and economics curriculum for high school students. Drafts of his unfinished epic cookbook and nearly completed full-length novel are currently getting nibbled by worms inside a hard drive somewhere.

Charles is a native of Ames, Iowa, a proud graduate of the Armand Hammer United World College of the American West, and a sort-of vaguely proud three-time Stanford University dropout.  He might not be the sharpest knife in the drawer, but he can do some serious damage to a bucket of fried chicken.
